Recipe:
~ 1/2 lb lean ground turkey
~ 1 cup frozen corn (uncooked)
~ 1 cup canned beans rinsed (I prefer kidney beans, some like black)
~ 1/3 cup chopped onion
~ 1 cup cooked brown rice
~ 1/2 can tomato sauce
~ 1/2 can fire roasted diced tomatoes
~ shredded cheese
~ 4 green peppers
~ spices to taste {I used garlic, pepper & southwest Mrs. Dash blend}
1. Cook your rice per directions on the box.
2. Preheat the oven to 375.
3. Brown and season the ground turkey. I used garlic, chili powder and Mrs. Dash southwest blend. Drain off any grease. Add onions.
4. Cut off the tops of the green peppers and remove any seeds & insides with a spoon.
5. Combine all ingredients minus the cheese in a bowl.
6. Spoon mixture into your peppers. Place on a foil lined pan. Sprinkle shredded cheese on top.
7. Place in the oven and bake on 375 for approximately 40 minutes under the pepper is tender and bubbling.
*You can also add additional cheese into the mixture before spooning into the peppers.
**If you are following the 21 Day Fix Meal Plan, use 1/2 blue container of shredded cheese on top of your pepper. Your container measurements per pepper (1/4 of the recipe) would be equal to
1 red, 2 green, 1 yellow and 1/2 blue.
